About 14 years ago, I was visiting a friend who went to the Culinary Institute of America and lived near there. She took me to her favorite chef supply store (one that supplies the students of the institute), which has a room devoted to knives. We had a conversation very similar to your story, in which she recommended the same array of knives as you. So, while I was there, I bought those five knives (each made by a different company) and, to this day, I treasure them. They are among my prized possessions, even coming with me when I have evacuated for hurricanes.
